In, Nashville, Tenn., Arnold's Country Kitchen a family-style restaurant is doing old-school Southern classic - meat and three sides. Southern Soul Barbeque is a barbecue joint where the pit master's smoking the old way - at a 1940s gas station. And in Wells, Maine, Diners, Drive-ins and Dives check out Maine Diner, a local favorite from the ‘50s dishing up New England comfort food like Seafood Chowder and Lobster Pie.

Maine Diner - Cod Cakes

2 lb salt cod
3 lb mashed potatoes
1 tsp white pepper
1 small onion, finely chopped, sauteed in 4 tbsp butter
1/2 tsp. salt
half and half
2 cups Potato Pearls
3 eggs

Place fillets into a 3 -4 quart sauce
pan with a large volume of water, bring to a boil and turn heat down so that
liquid is simmering. Cook for 10 minutes, remove from heat and leave in water
for 10 – 15 minutes. Rinse under cold water and break into flakes. Be sure to remove all bones. Drain the potatoes WELL! Mix all ingredients except eggs well. Add half and half as needed. Add eggs and mix thoroughly. Let mixture set in refrigerator overnight (freezing is better). Portion into 3 oz patties about 3/4 to 1/2 inch thick. Coat as would fried chicken w/egg wash and then 50/50 flour corn meal mix. Carefully side into hot oil. Cook 1 side for 3 minutes, then turn and cook until golden brown. Remove the cakes from the oil and drain on paper towels. About 24 cakes.

00:21:49 Salt cod is coated in a tremendous amount of salt, almost to the point of fish jerky.
